And the back of a bag of Kraft Cheese had this delicious, really easy recipe. I find a good many recipes on the back of boxes or labels. I bought a wilted bag of spinach and reduced bacon at the local Food Lion along with a bag of cheese with the rest of my groceries. When I was placing the cheese in my dairy drawer, I noticed this recipe on the back of the bag.
Spinach, Bacon, Mac and Cheese
3 cups medium shell macaroni, uncooked
1 package fresh baby spinach leaves
4 slices bacon, uncooked and chopped
2 tbsp flour
2 cups milk
2 cups shredded sharp cheese
1/4 cup parmesan (I didn’t have parmesan so skipped this step)
Heat oven to 350 degrees. Cook macaroni as directed on pkg, adding spinach for the last minute. Cook bacon in large saucepan. Remove bacon and reserver drippings. Add flour to drippings, cook and stir until bubbly then slowly pour in milk. Bring to a boil, stirring constantly, cook and stire 3-5 minutes or until thickened.
Stir in 1 cup cheese and cook and stir until melted. Add bacon and macaroni mixture. Mix well. Spoon into a 1.5 qt casserole dish and top with remaining cheese. Bake for 20 minutes.
